Roasted Asparagus and Cherry Tomatoes with Balsamic Vinaigrette

Ingredients

Instructions

  1. Toss the asparagus and tomatoes in olive oil, season with salt and pepper, then roast at 400 until tender.
  2. Whisk together 2T olive oil, 1T balsamic vinegar, salt and pepper.
  3. Plate the asparagus and cherry tomatoes, dress and serve.
